Serves 2
Ideal for toddlers 1yo+

  • 1/4 cup small sago seeds

  • 1 cup canned coconut milk

  • 1 ripe banana, mashed

  • a dash of vanilla extract (optional)

  • 1/2 cup fresh or frozen berries

  • Add sago, coconut milk, banana and vanilla to a small saucepan over high heat. Bring to a boil and mix for 5 minutes.

  • Reduce the heat to medium-low and keen the saucepan on a low simmer for about 20 minutes. Stir continuously and add water if the coconut milk is evaporating too quickly. When the sago seeds are soft and there is no more liquid, remove from the heat.

  • In another saucepan, add the berries and a dash of water over medium heat. Cook for 5 minutes or until the berries are soft.

  • Serve the sago pudding with the stewed berries.
